On rainy gloomy weekends like these all you want to do is curl up with a hot plate of wholesome goodness. Here’s what you do to fill that void in your belly perfectly. Thank me later.
- Toss a bunch of asparagus and thinly sliced red bell peppers in olive oil, sea salt, pepper and a pinch of garlic powder. Put it in a 375(F) degree oven (or a toaster oven on bake mode) for 15-20 mins, tossing them half way through.
- Add some sliced red cabbage to the hot roasted veggies once they are out of the oven. (The reason you don’t put the cabbage in with the veggies is cause you want it to stay crisp and not get all soft and watery.)
- Place on your plate and top with a sunny side up or two. How much easier can this get??!!
